Katz Jewish Apple Cake

INGREDIENTS

• 3 cups flour
• 2 cups sugar
• 1 tsp. salt
• 1 cup oil
• 4 eggs
• ¼ cup orange juice
• 2 ½ tsp. vanilla
• 6-8 apples (peeled sliced thin)
• 1 can cherry pie filling
• ½ cup sugar (mixed with cinnamon and sprinkled on apples

Instructions

  1. In a large mixing bowl combine flour, sugar, baking powder and salt
  2. Turn mixer on low and add oil, eggs, orange juice, and vanilla.
    Allow to mix for 2 minutes.
  3. Pour ½ batter into a greased tube pan.
  4. Cover with ½ apple mixture and ½ can of cherry pie filling.
  5. Pour remaining batter on top of apple and cherry mixture and smooth
    with rubber spatula.
  6. Cover with remaining apples and cherry pie filling.
  7. Bake at 350° for approximately 1 hour and 10 minutes.
  8. Allow cake to cool for 30 minutes then removing from pan.
